How to Make a Quiet Book: Grand FINALE

This is more for the gals that actually attended the swap and had the privilege of enjoying Susan's Pistachio Thumbprint Cookies! 


I think it's fair to say that we all enjoyed this swap (despite the stress or trying to figure out new sewing techniques on the fly) tremendously. I'm beyond thrilled with the final product and know we'll treasure this book for years to come. Thanks to Susan for coordinating this endeavor with me and for all of my friends (new and old) who participated! Merry Christmas!

Pistachio Thumbprints

1 cup butter, softened 
1/3 cup confectioners sugar
1 egg
1 teaspoon vanilla
3/4 teaspoon almond extract
2 cups flour
1 package (3.4 oz) instant pistachio pudding mix
1/2 cup mini chocolate chips
1/2 cup finely chopped pecans (optional)

Filling:
2 tablespoons butter, softened 
2 cups confectioners sugar
1 teaspoon vanilla extract
2 to 3 tablespoons milk

Directions:
In a mixing bowl, cream butter and sugar until smooth. Add egg and extracts; mix well. Combine flour and pudding mix; add to creamed mixture. Stir in chocolate chips and nuts(optional). 

Roll into 1 inch balls ( I use a cookie scoop). Place 2 inches apart on greased baking sheet( I use a silicon mat). Bake at 350 degrees for 10-12 minutes. Make a thumbprint in center of cookie while hot. 

Cool. For filling, cream butter, sugar, vanilla, and milk. Spoon or pipe into center of cooled cookies. ( I put my filling in ziploc bag and cut off the end and use that to fill the center.)
